Happy Independence Day Mexico! Thanks for making the delicious feast we had possible.
We HAD to eat some yummy Mexican on Cinco de Mayo, so we had a somewhat girls night at Vallarta's. My husband however, regretted his attendance and left early because, well, being the only boy at a table of giggly girls, isnt really his idea of fun. He got some good food in his tummy before scootin' out.

I didnt get a chance to make these, because if I did, I would have eaten them ALL. They look yummy tho. And you can just use the margarita mix and no tequila, for a virgin batch of cupcakes =)
Dont they look divine! and so deliciously perfect for a Mexican feast!
